Coulson Armstrong is one of Canada's most compelling chefs, shaped by over two decades of hard work, curiosity and relentless dedication to his craft. 

Raised on a horse farm in Aurora, Ontario, he found his way into the industry through a local pizzeria before pursuing the real-world intensity of Toronto's professional kitchens, most notably Canoe, where he worked his way up to chef de cuisine within 10 years.

Coulson spent three years travelling through 16 countries and working in 16 kitchens before returning to Canada to partner with Matty Matheson and Our House Hospitality Company, helping build a prominent Toronto restaurant group that includes Prime Seafood Palace, Matty’s Patty’s, Rizzo’s House of Parm and The Iron Cow. 

In 2025, Coulson won Top Chef Canada, but his reputation rests on something deeper: a commitment to leadership, hospitality and the kind of steady, grounded excellence that comes from truly putting in the work.
